A Michelin-Starred Experience
While Japanese cuisine is famous for sushi, sashimi, tempura, or other traditional dishes like teriyaki, tempura, and yakitori, Japan also excels in presenting cuisines from other cultures with finesse and innovation. Drawing inspiration from Japan’s culinary perfectionism and meticulous attention to detail, we were intrigued to experience L’argent Tokyo, which offers a unique style of modern French cuisine.
What makes this One Michelin Star restaurant so special is the combination of the Scandinavian innovation with Japanese ingredients and the French classics. Chef Kato takes you on a journey of his own experience in Paris and Copenhagen. The menu was presented in a minimalist design, leaving space for the mindblowing dishes to do the talking.
What left us utterly astonished?
Firstly, it was the sculptural presentation of each dish. Elements were balanced not only in taste, but also in colours.
Secondly, the way each dish was sustainable, prepared by using local and seasonal ingredients, minimazing so the food loss and mileage. As for example, mushrooms sourced from the chef’s native Shizuoka, or tea grown by his relatives.
Thirdly, the way chef experimented with dishes. As he quotes “…the true calling of a chef today is to constantly question his way of thinking and what he is trying to communicate, and then express that on the plate.” Each dish was done from scratch, presenting an entirely new style of cooking.
Our absolute favourite dishes?
The Foie Gras with green tea and jelly champagne was a unique taste. Never had we thought about such combination.
Eel tempura on spinach sauce that looks like nature on a plate with a very interesting sour taste.
Each dessert we tried was light to perfectly end the night.
