A Brutalism-Inspired Manifesto

Since the beginning of humankind, food has shaped our existence. Using fire to cook transformed us into Homo Sapiens, while the creation of agrarian societies turned us to urban creatures. We have always studied how food impacts cities and architecture, but Gent Malaveci came with the idea of food embracing an architecture movement, Brutal, as an inspired manifesto of Brutalism.

As we step into the restaurant, a sense of familiarity embraces us. We are greeted by a red raw ambience, walls adorned with photos of brutal architecture, and our favorite element – the simple yet richly characterized open kitchen – where one can marvel at the chef’s artistic movements. 

From the first olive plate to the desserts, each moment felt like an unexpected delight, discovering that this familiar place had, in fact, many doors, each waiting to be opened and offering a new experience we never thought we could have.

Traditional elements combined with modern culinary techniques evoked cherished childhood memories.

Signature dishes like burrata in porcini mushrooms, the veal tartare with kimchi sauce and grilled bread, the trahana cream with steamed fish balls and the meat covered in milk foam arrived in simple elements yet rich in taste. Our standout favorite, the veal carpaccio in berries and artichokes was served as a vibrant painting, contrasting perfectly with the raw elements of service. Last but not least, we flavor-meditated in each bite of the desserts pondering how well mint can go with white chocolate and yogurt.

Malaveci is a maestro of savor, passionately embracing the essence of high-quality ingredients. In the world of gastronomy, he stands as an artist, fearlessly venturing into culinary experimentation. Our time at Brutal was more than a dining experience; it was an invitation to perceive cooking through a new lens, a proposition to reimagine the culinary journey.
